Jose Larsen Omelette

This is one of my absolute favorite mash-up omelettes.  I had a hard time coming up with a name for it as it blends flavors from Scandinavia and Mexico.  I guess the corn in the bread used is the common thread here.  Who knows, but what is important is that it is really tasty and not too bad for you.

Here are the ingredients. I bought everything at WholeFoods:

  1. 1 block of vegan corn bread.  (I have tried many different kinds, but WholeFoods is the best because it is nice and crumbly, providing a nice crunch.
  2. 4 brown, cage-free eggs.
  3. 1 chicken bratwurst  sausage. (Buy extra as these are really great on the grill).
  4. 1/4 red onion.
  5. 4 asparagus stalks. 
  6. 1 fist full of baby organic spinach.
  7. 1 jar of Frontera Key Lime Mango salsa.
  8. 1/4 cup of milk.
  9. 1/4 lemon.
  10. Norwegian goat cheezse. (It’s brown and not white, sweet and not crumbly).
  11. Tapatio hot sauce.

Here is how to make your Jose Larsen Omelette:

Step 1:

  1. Dice or sting cut onions.
  2. Shave the asparagus stalk.  You can use nearly all of it.
  3. Cook the sausage however you like.  Grilling is the best. You can break up up the brat or cut into quarter size slices.
  4. Saute the onion in olive oil and then throw the asparagus in at the very end for a minute or so.

Step 2:

  1. Crack and stir eggs and milk together.
  2. Crumble 1/2 a block of corn bread into the egg mixture.
  3. Add your sausage, asparagus, onion and spinach.
  4. Stir it all together.
  5. Put your pan on medium heat and put in 4 tablespoons of extra virgin olive oil.  
  6. Once the oil is hot, add 1/4 of crumbled corn bread.  Shift it evenly around the pan. This makes it nice and crispy.
  7. Add your Jose Larsen omelette mixings and flatten. (You will want to use a large frying pan and giant spatula to turn this fat boy). 
  8. Cook for about 7 minutes or until the bottom is crunchy.  Be sure to check it and press down on the omelette as the spinach will want to reduce.
  9. Flip the omelette and cook for another 2 minutes.  Almost done.

 Step 3:

  1. Cut a portion of the and serve on a nice plate.
  2. Grate the Norwegian goat cheese generously on top.
  3. Add the Frontera Key Lime Mango salsa.

You are good to go and will impress many with this tasty mach-up!
